Blending it up. I'm sure a food processor is better.

I made some avocado pudding tonight. I’m not a great chef and didn’t really have the correct ingredients. Plus, I’m going very low GI this week so I wanted to sweeten as little as possible. I had to add way more Agave nectar than expected to make it taste like pudding. Wish I’d used a banana now since I blew the GI thing anyway. Bananas make great pudding all by themselves.

Long story… but I’m cutting fruits out of my diet this week, that’s why no banana for me. You should use one.

1 whole (215g) – avocado = 345
6 tbsp (30g) – Cocoa powder = 120
1 tsp – cinnamon = 5
1.5 tbsp (34g) – coconut oil = 290
4 tbsp (84g) – Amber Agave Nectar = 240
20g – Raw Almonds = 115
1 tbsp (6g) – Optimum Nutrition French Vanilla Whey = 25
12g – walnuts = 75

Total Calories = 1,215

Blended it all up. Sprinkled pumpkin pie spice & walnuts on top :) I also opted to cool mine in the freezer. Slows down my eating a bit. I recommend freezing it for an additional twist on “normal” pudding. Makes it taste like really smooth, cold, Christmas fudge!

I don’t really recommend using my recipe. It’s just for demonstration purposes. You’re probably a better chef than me. Try This one instead.

Next time I’ll use something sweeter and probably leave out coconut oil. Oil does make the blender clean up easier I think. Can’t hardly get myself away from the whey power. ON makes so many dang tasty flavors and I love adding them to things. This is fairly labor intensive to make with a blender, but I don’t have a food processor yet.
